Losing weight but still look skinny fat/bloated

I’ve been dieting for over a month now and I can see some change in my body and face but I still look skinny fat and bloat very easy.

Some days I’ll wake up looking slim and soon as I drink water and eat a small breakfast I’ll look skinny fat again.

I’ve been eating in a calorie deficit for over a month, my daily breakfast is either eggs on toast or weetabix and oat milk.

Sometimes I’ll skip lunch or snack light like a banana or sandwich and then for dinner I’ll either have some chicken and potatoes or a pasta dish.

My maintenance calories is between 2000-2500 and currently I’m having between 1200-1500.

I drink near enough a gallon of water each day but still can’t seem to get rid of the stomach fat, does anyone know why this could be?

It really makes me lose faith in losing weight as I know I’m losing weight as I can see difference on the scale but it doesn’t seem to going anywhere from my stomach.
