Getting enough calories while intermittent fasting?

I've been doing IF for about 6 weeks while eating an almost entirely whole foods, low-carb diet. My goals are to lose weight and lower my A1C, hence the low carbs. I've been eating 12-7. I stuff my face (in a good way) at noon with protein and veggies, and force myself to eat at 7. I've only been able to down about 1400 calories, which is not enough for me. How to get the rest in there?

So far, I've been using a high quality (I think) meal replacement (Huel) and low carb protein shakes (OWYN 32g). Does anybody else have suggestions on how to get the calories in, without resorting to carbs?
