set point/cico question

hi guys, posting here instead of an ed subreddit because unsurprisingly their views on this sort of thing are skewed but the people and posts here seem to be a bit more evidence backed/science based.

long story short, last year i relapsed into my anorexia, started recovery in august and since have gained from bmi 14.8/43.8kg to around bmi 18/53-54kg ish. took me a while to build up to it but a majority of the weight gain was when i started eating 3000-5000 cals a day in “binges”, and initially it put on really fast, but gradually started slowing down after a while. i hit 53kg in like late november and have still been eating between 2000-3000 cals a day but i am not gaining and i am sometimes even losing if i eat less than 2000 (i don’t count cals strictly anymore so that’s estimation.)

now i’ve seen a lot of posts on this sub about how set point is bullshit but is there any chance that my body really is just fighting to stay here? when my relapse started i was around 54, but that was after unintentional and natural weight loss from going vegan - before that, after recovering from my eating disorder the first time, i was like 78kg so i assumed that if set point was real my set point was just high (was overweight before my initial eating disorder as well).

i don’t really know what i’m asking, im just confused because i’m not super active and according to cico i should definitely be gaining with the amount i’m eating. it seems to me like set point theory must be real to some extent because the maths here just isn’t adding up at all (but then why is my set point still slightly underweight if it is real?) but i thought i would ask here since everyone here seems pretty knowledgeable about cico and set point etc.
