How to start?

20F 5’1 190lbs All my life I’ve been on a healthy weight I’ve always weighted less than 130 pounds but as soon as I started taking birth control I gained a lot of weight and I’m not sure why. I was recently diagnosed with insulin resistance and the doctor recommended me to go low carb and not eat more than 100g of carbs a day, I tried keto with less than 30g a day but it didn’t work for me since I could never stay in 30g, 100g is way more achievable for me. I used the calorie calculator and said my maintenance calories is a bit more than 1700 and that I should go on a deficit where I eat 1200, my problem is, is 1200 too low? Is it sustainable? I don’t eat too much but I feel 1200 is not a sustainable long term option for me since I have so much weight to lose. I am so lost I don’t know where to start please help.
