I’m going to have to calorie count until the day I die, aren’t I? Should I just accept this?

I lost about 45 lbs last year. Strict calorie counting was the best way to do it. Then my wife had I had a baby and I stopped counting—gained back about 15 lbs. I started calorie counting again and got back down to nearly the same weight as before. But I recently decided I wanted to be less neurotic about food in general—I mean, it’s to the point where if my 2-year offers me an apple slice I tell her no and she looks hurt. So I stopped counting and decided to just focus on smaller portions. And I’ve been good! No fast food, healthy choices, etc. AND THREE WEEKS LATER I am back up 2 or 3 lbs and my middle is definitely softer. Should I just resign myself that I’m going to have to count calories until the day I die? It just seems that can’t be a normal and regular way to live. Aren’t there people who stay a healthy size their whole lives without logging every darn thing they put in their mouths? Please help. I’m feeling a little sad and despondent.
