Need advice: overcoming dinner fatigue

I tend to do well for breakfast and lunch, but I constantly struggle with dinner! By the time dinner comes around I no longer want the meal I planned, or I'm tired of cooking, or I just flat out don't want to move anymore. How can I overcome this? How can I push through this sudden cooking fatigue and just make/eat what I planned? It's like I am exhausted by eating healthy throughout the day and I just want something easy, but that seems so stupid. I know how to do better, I plan my meals and buy all the food for the week, and then I just don't want it. Why?! Does anyone else struggle with this, and how do you get through it?
