How to choose a goal weight?

So long story short, over the last year I lost ~25 lbs (6'1, 205 to 181 lbs). This last month, I started replacing some meals with protein shakes and hitting the gym harder in order to increase my lifts. Combined with the holiday calories, I'm back up to 190 lbs. I feel healthy, I'm the strongest I have ever been in my entire life, but I have more stomach fat now and my goal from the beginning was to get visible abs. So my question is, should I keep cutting weight? If so, what is a good goal weight for a 6'1 guy?
