How to change a routine without a routine to start with?

I’ve been struggling to count calories because I don’t have a routine. I’ve just had a really tumultuous couple of weeks, moved out of home. At home there was some routine because my family’s hours dictated when I ate. Now there is no routine since I’m living on my own, and my schedule differs every day. I can barely adult. Over the tumultuous period I was hardly eating and then now that things have settled a mini binge few days happened. And even if I’m back to normal, counting calories freaks me out because even though I can do that without a routine I also then don’t eat proper food and so my calories might be ok but nutrition is shit. I have a shrink and I am pretty sure I have ADHD, so tips about seeing a mental health professional are not necessary because I sort of have that in hand. And yet changing my eating habits feels like an impossible obstacle, since I take every day as it comes. Any advice from someone else like me?
