Eating at night?

(28M, 5'6") Beginner here, I just started trying to lose weight and I have a question. I read that your body digest food in around 4 hours and you can gain fat as fast as 1/2-2 hours after eating? I usually started exercising around an hour after breakfast, but I'm worried when it's dinner. Right now, I'm eating dinner moderately, I can't just eat a little because I've tried in the past and it backfired when I got so hungry that I can't sleep until I finally buy something to fill my stomach (and the food's around here are mostly unhealthy at night).

Anyway, now I'm eating just enough (some steamed tofu, beansprout, and fruits) to keep me from being hungry when I sleep. That being said, I didn't do any physical activity after I have dinner, so won't most of it turn into fat?
