Lab results

So I was born without a thyroid and have been on medication for it since I was born. However, I recently got a full lab panel. Cholesterol, b12, iron etc. I learned my b12 is very low and I need injections. But I also learned my cholesterol is too high. She said it wasn't high enough for medication, but that it can be fixed by diet and exercise.

Because of my thyroid and possibly the b12, getting motivation to cook and exercise is incredibly hard for me. But this has been a wakeup call. I can't keep blaming my thyroid for the reason I'm overweight and lazy. I need to start cooking and exercising. Does anyone have any healthy recipes for one or two people (hey maybe I can get my unhealthy-as-me husband to change his diet with me) that are fairly easy for someone that almost never cooks? Also anyone know of a good tennis shoe brand? All the tennis shoes I've ever bought have been enormously uncomfortable and it makes exercising a chore. Thank you all in advance!
