I am hoping to start a post where we can all share ideas to get veggies in at breakfast. I'm used to either skipping breakfast entirely, or eating stuff that either masquerades as being healthy when it's really packed with sugar, or foods that are straight up desserts. Someone here suggested to me that a good starting point to clean up my diet is to try to pack veggies into my day as early as possible. So I am taking this small step to start laying the first foundation block for a healthier diet.
I have prepped my breakfast for the next two days. A half cup of plain nonfat Greek yogurt mixed with 3/4 tbsp of ranch seasoning, along with a cup each of raw carrot and cucumber and a small handful of grape tomatoes. This all comes out to between 200 and 250 calories according to MFP, and it is a veggie- and protein-heavy, and delicious start to the day. I know the seasoning has a lot of sodium and soon I will start experimenting with how to make my own seasoning with less sodium but for now it's quick and gets me moving in the right direction.
