Needing advice or help.

I have been on a weight-loss journey since September of 2018. I did really well with CICO during the first 10 months and lost about 60lbs. Then I gained about 23lbs back over a 3 to 4 month period. Not really eating a whole lot more but I wasn't tracking so I could have been going hog wild even though I didn't feel like it. Original weight 262lbs weight in October 2019 208.4lbs

So I decided in December it was time to start over and try something new. I joined a gym and have been doing 35 minutes of Cardio (Walking a treadmill) in the morning fasted. Then about 30-45 minutes of Strength training.

Anyways before joining the gym I had lost about 10lbs over 3 weeks. Water weight I know but still. Since then I have barely lost anything else. I currently sit at 220.6lbs.

My diet is a max of 1600 calories and I am Gluten free (went Gluten free in 2019 to try to help my wife cut gluten to help her MS symptoms). I have a protein shake around 9:30 AM to break my fast and then a large salad with 2 to 4 TBSPs of dressing usually around 60 calories. This salad includes 4-6 ozs of chicken, pork, or fish. Then nothing else until dinner which varies. But usually comes in around 800 calories and I have a snack around 8. Usually my snack is some sort of protein or a large portion of Broccoli.

Anyway my issue is I am getting frustrated with not losing any weight over the last month and a half. I am having trouble staying the course when I am not seeing any results.
