How do I stay motivated, when doing everything it seems and not seeing success?

I am going to say it. I am feeling depressed about not being able to lose the weight. For reference I am 43, (just had my birthday) 5’7” and top weight was 225-20 years ago. Currently I am at 189. I am very athletic, have a healthy thyroid, and have a physical job. I have done so many “before pics” and want to get to an after photo. I have been doing my fitness pal daily for two months and have lost 6 pounds. I lost 8 and gained back 2 in the last 4 weeks. My calories have been between 1400-1800 and had one day of 2100, but ran 7 miles.

I do spinning, running and some weights, but cannot do much arms because of bad arthritis in both elbows. I know it is a marathon and not a sprint, but need to feel like what I am doing is doing anything. I don’t eat a lot of meat and working on getting more protein, but tofu and other meat pretending products are weird.

Every day is a struggle to feel like what I am doing is making a difference, but I have been 190-198 for almost 18 years. Maintenance is great, but still am labeled obese every year at the doctor and it is really getting to me. I can’t be more physical than I am (average 15-28k steps a day depending on runs). The math of it all doesn’t make sense 3,000 kcal deficit is a pound lost. I need a boost and this is ruling over me right now.
