Has anyone transitioned off of keto to a more normal diet and not gained any weight or perhaps even continued to lose weight?

I have been following keto faithfully for a little more than a month. I also track my calories and macros. I have lost some weight, especially in the beginning but the last couple of weeks the scale is really starting to creep down much more slowly.

Also, I have crohns, and at first keto seemed to really bring it under control but in the past few days I've started flaring again.

I'm also tired all the time, and I know "they" say you will be tired at first, but it's been over a month and I'm still tired, plus i have restless legs and this horrible itching keeping me awake at night.

I am starting to think keto isnt for me and maybe I should transition to a low/moderate carb diet, leave out the sugar and most grains, but bring back oats and potatoes and fruit and the occasional loaf of homemade bread. But I'm scared that I will backslide and I have such a long way to go- over 100lbs.

Have any of you started keto, and then stopped it without gaining back what you lost?
