Fairly healthy stuff that can be ate as-is or microwaved for someone with an insane work schedule?

I'm currently working like 55-66 hour weeks (mandatory) for the foreseeable future and just had a couple of health-scares back to back and I HAVE to stop eating the pre-cooked frozen chicken strips I buy by the bag because they're fast, tasty and filling.

Last night I was in the ER for 5 hours for weird chest pains (followed by gas) that I've had for several days. The tests were clear for heart-stuff and I was told to get some prilosec.

But I saw my test results a few hours ago and noticed my liver enzymes are up again (something I've been fighting off and on for like the last decade). I just got done with the exercise bike and some other exercising with stuff I had laying around and now my limbs are like jelly. I gotta somehow keep my lazy ass on this. I have a doc appointment in 2 weeks.

I also got one of those Instant Pots but I've never used it.
