Please help me get this never ending plateau!

Hi! I'm using a throwaway just to keep identifying information off of my main account. I'll try to get straight to the point!

Starting weight: 168lbs
Current weight: 144lbs
Goal weight: 125lbs

I'm 5'4", 27 years old, and female. I have been stuck on a plateau that is seemingly endless. I'm talking roughly six months straight of making zero progress whatsoever, after almost a year of steady losing. I have no idea what changed.

I go to the gym 4-5 days a week, and those workouts include a two mile run, rotating weight training routines for 25 minutes, and a 10 minute core workout. I am at the gym most days for about one hour before work. I then bike to work, which adds up to six miles per day, four days per week. I work on my feet in a kitchen at ten hours or more per shift.

I'm currently trying intermittent fasting on a 16/8 schedule, eating from 2:00pm-10:00pm. I go to bed around 2:30am every night, so it's plenty of time to digest before sleep. I meal prep often, weighing all of the food that I prepare. The only thing I'd say I lack is getting enough vegetables in my diet, but I'm aware of it and working on it.

I log my food into my Fitbit app, and it says I'm creating a calorie deficit. So I guess my question is: what gives? I made it to 138lbs at one point probably around June, and I've steadily gained until I reached 144lbs, and I cannot seem to figure out what the magic combination is. I am plenty active and don't eat like a trash person, so I don't really know what to do anymore. Any advice for those who have been similarly trapped would be appreciated! I'm just getting so discouraged because I feel like I'm doing a lot of the right things, but nothing is working anymore.
