I need some help

Hey guys, 6'0" male, around 225 to 230 pounds.

My goal would be to be around 190 to 200, given my body build.

The main thing I need help with is figuring out a low impact exercises due to joint problems stemming from my prior military service, as well as diet help.

See, I have never enjoyed vegetables since I was a kid, to the point of going out of my way to avoid them. This has led to some malnutrition on my part as well as pretty bad dietary habits. I need some good recommendations on where to start with veggies. My primary aversion is taste and texture(i.e tomatoes have a watery crunchy sweetness that I dislike in larger sizes), and if I avoid eating any large chunks it would be nice. I found a good recipe for avocado egg salad that I am considering starting with, but if you guys can think of anything I'd be more than grateful. Also, beans can die in a hole after my last experience with them. Never again.
