Getting Over Sticking Points for Good

I (late twenties M) am around 197 pounds and would like to be at 175.

I've lost a decent amount of weight before (25+ pounds over 1 year) by counting calories, eating a lot of vegetables and keeping protein high. I was really motivated a few years ago, but lately I don't find joy in cooking and doing dishes. I want a fast solution even though it was only by embracing the unknown (dieting) that I was successful.

When I lost the weight, I guess I looked like I worked out, but I wasn't ripped. I'm in much better condition now. I can walk and hike long distances, do intense hypertrophy workouts with weights, and jog. But I have a decent amount of fat hiding my muscles. I'm kind of in the skinny fat stage, and the harder I workout, the more I crave carbs.

I've tried to modify my old diet; at my lowest, I got down to 1700 calories.

I've even gone to 2000+ calories since I work out a lot more than when I was dieting, but I still struggle with brain fog, feeling weak—which affects my gym workouts—and irritability. My blood sugar feels out of wack, resulting in cravings for doughy foods. There's an underlying feeling of emptiness that I seem to struggle with.

How do I get over those feelings of muscle weakness, brain fog, irritability, etc.? I'd like to start being consistent instead of dieting for 1-3 weeks and giving up.
