If you happened to try the tomato feta "TikTok pasta" that was going around a while ago, and you loved it as much as I did, do I have good news for you.
- 1 1/2 cup of dried chickpeas, cooked (or two cans)
- 8 oz block full fat feta
- 2-3 pints grape or cherry tomatoes
- 4 garlic cloves, smashed with the flat of your knife
- 1/4 - 1/2 cup olive oil (depending on preference and calories available)
- Crushed red pepper, salt, black pepper
- a fuck ton of fresh arugula
Start it just like the TikTok pasta -- block of feta in a 9x13 baking dish, surround with tomatoes and garlic, cover with olive oil and toss tomatoes to coat, season with salt, pepper, and crushed red pepper to taste.
In the oven at 400 for 15 minutes until the tomatoes start to get juicy. Stir the cooked chickpeas into the tomatoes, season again, and pop back in for 10 minutes or so. Crank up your oven as high as it'll go for another 5-10, until it's sizzly and the cheese is a little brown.
Remove from oven and stir it all together to make a creamy sauce. Full a large bowl with as much arugula as you want to eat. Salt and pepper your greens liberally then toss a bit. Once the chickpeas have cooled slightly, scoop 1/6 of the pan per serving into your bowl of arugula. Toss with salad tongs until combined, the salad is uniformly dressed, and the arugula has wilted slightly.
Each serving is less than 500 cals, high in protein, a huge volume to fill you up, and salty creamy delicious.
