Is this an appropriate diet?

Hi! I am trying to lose some weight I gained due to the pandemic/stress. I have already lost a good amount doing hot yoga/Pilates and eating better and am going to start running/walking each morning. My question though is is my diet ok? I currently work from home so am doing my best to not snack a lot. I was vegetarian for a few years but no longer.

Breakfast 2 scrambled eggs with sautéed (light olive oil) peppers, mushrooms and onions. Sometimes a piece of toast or a frozen waffle. Coffee w almond creamer.

Lunch Trader Joe’s frozen dumplings or some kind of salad.

Dinner Grain bowl (brown rice, avocado, veggie burger, veggies, hummus and vegan pesto). This is just what I had tonight.

Snacks Popcorn, salami and a little cream cheese, veggies.

I don’t drink during the week but just graduated college and like to go out with friends on the weekend. I try to stop eating at dinner but will occasionally have a snack. I also try to drink a gallon of water a day.

Any feedback is very very appreciated!!!
