48 lbs in 4 months, taking my first diet break

I’ve been going since end of May this year, and I am down from 310 to 262 right now. I feel great, some of the stuff my doctor was concerned about has been fixed (cholesterol, glucose, blood pressure). The last 4 lbs have been stalling and bouncing for the past few weeks so I decided it’s time to take a diet break. The only problem is I don’t really feel like eating much more, and my macros have been a bit off for the past month or two, less protein as I stopped drinking shakes on the advice of a nutritionist. Also taking a break from daily weigh ins and trying to not look at the scale for a week at a time. I’m not really sure what to expect from this. I’ve been eating at 1500-1800 previously and I am trying to do 2500 now. Any healthy vegetarian options to boost up my calories without carb loading or fat bombing?
