Looking for some advice

Hello!

I'm trying to lose some weight (aren't we all). I'm sitting at approximately 160 lbs and 4'11". Obviously, not an ideal weight for my height. I'm hoping to get down to 130 or so. I have a fairly active job that requires me to move around a lot during the day and I am trying out the Nobs Home Guide for working out; I'm an essential worker and I am too scared to go back to the gym right now. I was running in the spring, took a break during the summer because I was basically working two full time jobs, going to grad school, and it was ungodly hot this summer. I'm probably going to get back into running for a little bit this autumn before I start cross country skiing in the winter (I think I'm the only person I know who actively looks forward to the colder months).

I recently had some bloodwork done and there were some numbers that I didn't necessarily like.

Now, I've never been a thin person. I hit puberty when I was like 10 and I've had boobs ever since. I know that BMI is generally BS, but it's saying that I should weigh 114 at the most and I feel like that would be way too little for my body type. TDEE has me at 1600 calories per day to cut, but I am actively scared of tracking my calories due to a familial history of eating disorders and my own obsessing over calories when I'm tracking. I'm trying to eat only when I'm hungry and not over doing it, but I am also prone to stress eating and, being in grad school and working, I am fairly constantly stressed.

Diet wise, I eat a lot of cheese (the curse of the midwest), probably about seven or eight servings of vegetables a day, and I try to stick with leaner meats such as chicken and fish. I eat carbohydrates, but I have found that my stomach gets pretty upset if I eat too much bread or pasta. I'm trying to steer more clear of using too much oil in my vegetable roasting, but my cast irons need some re-seasoning and vegetables have been sticking without oil lately. I have a fairly hard time inspiring myself to exercise, but I have found some pre-workout that doesn't make me too buzzy and I'm thinking about getting back into using that for workouts and/or running.

Basically, I'm looking to see if anyone has been in a similar situation and what they found worked for them. I'm going to be honest, I don't have the capacity to do a diet like Keto, but I am open to some suggestions. This week I'm eating a chicken and wild rice soup for dinners; roasted egg plant, peppers, zucchini, and summer squash with pita, feta, and homemade tzatziki sauce for lunch; fiber one bars for breakfast; and bananas/oranges/grapefruit for my snack during the day.
