calorie deficit but still gaining weight??

I'm pretty new to this so I just need some tips on how to adjust what I'm doing. I've been tracking my calories using MyFitnessPal, and I'm staying well under the number of calories for my weight which should allow me to lose even a small bit of weight even if I'm not exercising regularly aside from general walking and stair climbing (I will soon but my country is at peak covid numbers and I'm not vaccinated yet, so I'm avoiding the gym but also a terrible heat wave so everywhere else is too hot to do much exercise 🥵)

So I'm about 340lbs (5'5 woman) and MyFitnessPal recommends my daily calories as 2,690 and I always stay under 2000 and often under 1500 (and mostly quite healthy foods and single portions with just a small snack or two at the most) so logically I should be at least not gaining weight, and yet many mornings I'll weigh myself and find that I've gained a pound or so. Am I doing something wrong?

I just started about a month ago and I lost about 7lbs quickly in the first week or so (water weight, I'm sure), but now I'm just stuck in seemingly gaining and losing the same 1lb every other day! Does anyone have any ideas of what I could do differently?
