Scale isn’t moving after one week of 800-1000 kcal deficit. Why? How long does it take to get jump started?

I have been in a deficit of 800-1000kcal per day for one week now and the scale has not moved.

I track my food like a hawk. Weigh, measure, log, then eat etc.

161cm and 69,8kg.

I am eating around 1250 kcals from clean food (think salmon, chicken, rice, potato, spinach, veggies, protein bread etc, with an occasional red bull zero thrown in the mix)

My fitbit is calculating an expenditure between 2100-2400 a day (with my 10k steps).

I do IF so I eat between 18:00-22:00, I sleep about 7 hours a night.

Does it take an initial x amount of time before the scale moves or should it be instantly? How long did it take for you? I am worried I am doing something wrong.

I went from eating about 2500-3000 kcals a day to 1200 so I must be seeing some kind of difference already. I am not weight training, only walking and cycling to get my expenditure to 2100-2500 per day.

Tl;dr scale not moving after one week- should it have?
