Weight is stuck despite working extremely hard, need advice

Age: 32 Gender: Male Height: 6'1"

Original start weight: 400 Original end weight: 210 Original length of time: 2 years

Current start weight: 345 Current weight: 246 Current length of time: 1.5 years

Goal weight: 200-215

So, a little back story. I grew up obese ever since I was about 11 (was 200 pounds by then.) So, I've carried a lot of weight for most of my life. That all changed a little over 6 years ago when I discovered martial arts. I fell in love with it immediately, lost a shit ton of weight fast, and then even fought a few times at 195lbs.

Then life happened, I wasn't able to train like I did before, and backslid into some old habits. Over the course of the last couple years my weight slowly grew back up to 345. I hated it, and when I got a new job last April, I decided to change up a lot of my habits along with it. Started training more frequently in the evenings with more intensity again. Started lifting weights 3 days a week (last time I lost weight it was all cardio from drilling, sparring, and running.) I really focused on eating clean and getting enough of the right nutrients.

Progress this time around has been slower, but better. I notice that the strength training has really helped me with explosiveness and power on strikes and helps with added definition. I've also gotten a couple dexascans along the way and I've only lost about 1.5lbs of lean body mass since I started (I have about 153 pounds of lean body mass), which is rare for someone who has lost as much weight as I have.

However, that all changed a couple months ago. I got to about 265 and got stuck. For a month and a half, my weight didn't go down. When I talked to my doctor about it, she suggested that I change up my diet and try low carb (50g net a day). It worked great - at first. I was down to 250 in about 2 weeks. And then it slowed down. And now for the last 2 weeks I'm seeing that same pattern as before. My weight every morning is between 246-248. This is especially frustrating because I just need one more pound for it to be my 100 pound mark for this time around.

The typical answer is eat less/do more. But I honestly don't know if that's possible. I'm already doing so much. I'm already training as hard as when I was in fight camp before. Training wise, almost every day I'm working out twice a day. I do strength training 3 times a week with 15 min warm up, just over an hour of lifting, 20 mins cool down/stretching. On non-lifting mornings I do the same warm up and stretching, but run 2 miles instead of lift. In the evenings, I'm attending either a class or doing fighter training for usually 2 hours, sometimes longer. Fighter training is 3 times a week, and is very intense. A couple days a week I foam roll/massage gun to stay loose. This all comes out to me doing 2-a-days every day except Saturday which is just lifting. If I feel like I need a break, I'll pick a Monday or Wednesday to just run in the morning and not push the pace and maybe skip class that night.

And here's going to be the shocker. I'm only eating 1500-1600 calories a day (1500 on lighter days, 1600 on heavier days). This is the big point I don't understand. I'm eating LESS than when I was doing fight camps before and have more muscle. You would think that I'd be able to burn that excess fat easily. This should be a massive deficit. But the weight isn't moving. I make sure I get just enough carbs and fats to where I feel energized, focused, and still have explosive energy. I tried doing 1400 calories a couple days and I definitely noticed a big drop in all of those areas. I don't think I can lower it any more.

For a typical heavier day, I get the following macros: Calories: 1627 Fat: 90g Carbs: 70g Fiber: 23g Sugar: 24g Protein: 140g

Breakfast is a bulletproof coffee with a scoop of protein powder added. Lunch is 1 oz red lentil pasta, 8 oz grilled chicken strips, 2/3rd cup mixed veggies in marinara sauce. "Dinner" is a protein smoothing with half cup plain greek yogurt, half cup almond milk, scoop of protein powder, 3 oz blueberries, and 1-2 tbps of chia seeds (1 on lighter days, 2 on heavier.)

All of it good, clean food that are high in nutrients. I will sometimes switch out the lunch for something different, but always make sure it's about the same calorically, and roughly the same macro wise. Sometimes just some greek yogurt and an ounce of nuts instead of the smoothie.

All of this combined should mean that I'm in a massive deficit. I'm still probably over 30% body fat. There should be no way that my body has hit its own target weight. Especially when I know I lost a bit more a few years ago.

And please don't take this the wrong way. I love what I'm doing. Even if my weight isn't moving right now, I'm seeing increases in strength, conditioning, and ability. I plan on fighting again someday and am trying to do my very best to be the best version of myself when I get there. But part of that is getting to a reasonable weight which is why getting stuck like this is so frustrating.

Does anyone have any ideas on what I could maybe change or do? Or some other advice?
