How do I start counting calories?

I've been trying for months, I bought a scale, subscribed to a decent app that I try to log all my meals into as I go but when it comes things like recipes that I make on a weekly basis I just lose motivation to track them, I typically make things like chilli, various curries, pasta sauce etc. as its easy to make in one big batch and are great left overs.

I've made great progress over the last 7 weeks, while not being strict with a diet, I've cut down on my alcohol consumption (beer was the bulk of my calories), no pop/soda, limiting carbs and to add to that been walking an average of 15k-25k steps daily, and lifting weights 3-4 times a week. - I've gone from 208lbs to 191lbs - this is without properly tracking calls and macros, I'm certain that my progress would be better if I had tracked what I was eating.
