High weight low rep?

A lot of dudes do these like 200lb+ deadlifts/squats for only 5 reps. I currently use dumbbells at home ( no access to a gym atm) and have built a nice amount of weight. I use an EZ bar that only has around 50lbs on it for deadlifts and bridges, but i see little results compared to people who do what i described above.

For example a guy posted a workout with the sets + reps for a deadlift listed as: 5x5 (80% of 1rm) and I usually do 3x15 with my little weights.

He then does Romanian barbell deadlifts 3x15 but doesn’t say the weight. Would these need a high weighted barbell as well?

what is 80% of 1 rm? How do you find that out for yourself?

I’m about to join a gym when I move and really want a dump truck so I need to get on whatever they’re doing since what I’m doing isn’t creating much of a dump nor truck. I googled the question and only more complex answers came out of it. Please explain like i’m five! thank you :-)
