What's a good way to get in some extra calories? Or should I just not bother?

My calorie counting app is currently giving me a budget of 2,019 calories per day, and while I do get close to the budget when dining out with my girlfriend on the weekends, most days I'm quite a bit under. While this is fine (so far it's lead to me losing more than the two pounds per week my plan is aiming for), someone on here advised me not to eat too little, as it could slow down my metabolism. I don't actually know the specifics of that, but at the time she recommended not going below 1,500 calories.

I tried looking into this myself, but all I got were "healthy living"-type sites that reference studies, but don't actually cite sources, so who knows what's true. Assuming it is true, though, what should I be eating for those extra calories when I come up short? I just finished dinner, and am sitting at 1,127 calories for the day. Do I just bust out the almonds after finishing my workout later tonight, or what? I'm at a bit of a loss, because I'm currently full and would basically require another meal to get me up to 1,500.

Or, does it not matter at all? I appreciate you taking the time to read this, and any feedback would be greatly appreciated!
