Losing weight and iron deficiency

F 24, 160cms, SW:165.3lbs CW: 126.7lbs GW: 119lbs

I started CICO(1200 calories) and walking in March 2020 and lost weight gradually. My lowest weight was 120lbs. I was so close to my goal but healthwise I was absolutely miserable. Last month I had frequent headaches, nausea, fatigue and bad hairfall. Turns out I have iron deficiency and vitamin B12 deficiency. My doctor gave me supplements but they also told me to eat well. I put CICO on hold and started eating better. I feel better and the headaches are gone now but I also gained 7lbs since then and the number on the scale is only going up. Has anyone faced a similar situation? What should I do?
