How to add more veggies to breakfast and snacks?

I’m working with a certified dietician nutritionist (I forget the legal titles, but someone who has their masters degree in nutrition) on what I should eat in a day. Having a number of servings of different types of food has been really helpful so far, but I consistently fall short on how many veggies I should eat. According to her, I should eat 5 servings of veggies a day, a serving being 1 cup raw or 1/2 cup cooked. I usually end up with 3-4, usually 1 at lunch, 1 for a snack, and 1-2 at dinner.

For breakfast I eat either oatmeal or yogurt, usually with berries (to get a fruit serving in). I don’t have the time to make eggs every morning, nor do I think I could stomach eating eggs every day.

For snacks I’ve been eating carrots with hummus, which I don’t love but is doable. I can’t do raw broccoli or tomatoes. I could add cucumber, but again, don’t love it.

Any veggie breakfast or snack ideas?
