The groundhog day effect

You know.. every day is exactly the same. I am so close to giving up. Stats: F39, 5'7", HW180, SW159, CW148.8 GW135 lbs. I have been stuck for what seems like forever: https://imgur.com/a/hGICLZT

I weigh everything and have been eating 1200cal/day for 50 days. No particular macros, just calories counting. I'm fairly sedentary (office job) but I do go for walks (3.5km, 5.2km/hr for about 40 mins, 3-4x per week). My smartwatch tells me that burns 250ish calories per walk but I don't eat those calories back. I drink water, not huge amounts but at least 2L a day.

I know that women retain water, have weird hormones, etc etc but this is ridiculous. There is no way I'm eating more than what I'm logging - I cook separate meals and log right down to the non-stick spray. Everything is weighed. It's exhausting. I've never posted here, I don't think, but I've lurked for years. PLEASE suggest any other course of action than what I'm currently doing.. I'm starting to wonder if this is impossible.
