Advice / tips needed!!

I guess my question is how fast can you gain fat vs water weight /water retention?

After finally reaching my goals (141 lbs and 18% bf at 5'9'') I completely fell off the wagon due to family problems. I completely stopped going to the gym for a month, moved a lot less (most I did was 6.000 steps lol) and ate more - other days healthy foods but a lot of cheat days pizza, ice cream, burgers etc. I'm not sure how much weight I gained, my clothes still fit but are a bit tighter (denim shorts). My intake varied from 2000 to ~4000 calories. I don't wanna weigh my self yet and I have an appointment with my nutritionist on October 1st. In your experience is fat gained that fast or is it possible it's mostly water weight? Also, after some progress in the gym are strength and muscle severely affected after being sendetary for one month ? I thought of drastically dropping calories and/or carbs but I'm afraid it will lead to bingeing, I still don't have access to the gym but I'm hoping walking >10.000 steps and maybe some bodyweight exercises will help bounce back. Any advice would be appreciated!!
