Why is losing 10 lbs so f**king hard?

For context I’m 28F, 5’6” and currently at 160 lbs. I’m pretty happy with my body but at 150 my clothes fit a lot better and I lose the baby fat from my face. I’ve been trying to drop this weight for years and it’s like my body can’t do it. Every so often I’ll get stomach flu or go through a stressful time and will drop down to that weight but as SOON as I start eating normally again I’m back up. I eat healthy meals, do mild IF (eating only between around 9:30 and 6:00 pm, no evening snacking), and am fairly active. I don’t binge on snacks or eat out a lot and I make pretty much everything from scratch. It’s like my body just wants to hold onto the few extra pounds. Has anyone else had this happen and how did you finally drop the weight? I’m not interested in a strict diet because I need to be able to stick to something long term! TIA.

I’m editing this to say that I recently had bloodwork done and my thyroid and iron levels are normal so it’s not an issue with that.
