I recently discovered a meal that I love. It’s a Spanish-style omelette using mozzarella. Packed with veggies - it’s sooo much much and the potato is sliced thin so it goes really far. I used a massive skillet to make it so it fills my largest dinner plates.
The combination of egg and stringy mozzarella makes me feel like I’m having a pizza and cheating on my diet 😂
I was curious to know if you all have a healthy “cheat” meal - a meal so good it makes you feel like you are not supposed to be eating it.
Also if anyone is interested, the calories for my omelette are below:
- 2 eggs (150)
- half red and half green pepper (30)
- 6 baby tomatoes sliced (20)
- third of a ball of mozzarella, 45grams (130)
- sliced baby potato, one or two (50)
Altogether - about 400 calls!
