Losing my appetite. Can anyone relate?

F30, I’ve been working on losing weight for a year, I was doing great with cal counting and exercise then the pandemic put a wrench in those plans, mid August I said fuck it let’s get back on track. 215lbs beginning of August and I’m at 201lbs today. I’ve been following a strict 1200cal/day diet and eating vegan, whole foods, all prepared at home, equal parts protein/carb/fat. I don’t add sugar or salt to foods. Recently I’ve had difficulties meeting 1200cal/day. It’s only been 4 days so far, but by the evening I have ~200 cal left to eat and I just don’t feel hungry. I try to then eat fruits or salads or something lighter to make sure I’m hitting min of 1200cal/day because I don’t want to get sick, but I feel so full after eating that last bit of food. I’m losing weight quickly, which I’m happy about, I’m happy to not have crazy cravings or feel hungry but I am abundantly aware that this could mean an eating disorder? Should I be concerned? Has anyone had this experience before?
