I lost only one pound this month... is that normal?

18F, 5'4", SW: 165lbs CW: 132lbs GW: 120lbs

I do 10k steps a day and 45-60mins of cardio activity 5x a week. I don't do strength training even though I should but I don't because I have gym anxiety.

I can't believe I lost only one pound this month. Normally I'd lose 3-5 pounds a month, but that was when I was eating 1400 calories and I was feeling fatigued so I started eating 1600 calories this month. At first, eating 200 more calories made all the water weight come off so I went from 136 to 133 in a matter of 6 days, but after that I've barely made progress. I mean, I can't be eating THAT close to maintenance cause I'm doing too much physical activity for 1600 to be THAT close. Eating 1400 made me tired and fatigue and it was hurting me physically and mentally.

Before anybody asks, yes, I weigh everything with a food scale and not with measuring cups or teaspoons. Yes, I measure ever single thing I eat. Bites, oils (which I barely use anymore), etc.

Is losing one pound normal? Am I going insane?
