Shifting to a calorie-deficit diet.. Struggles and suggestions?

Hi! So in short, I'm a foodie. I love nice food, to cook tasty food and can't really stand bland. This had been a struggle in finding meals to stick to. But I'm (23f, 5'7, 69kg) struggling to lose weight on what I currently eat. Although I didn't think I ate that much (a meal and a half a day), I'm clearly doing something wrong as nothing is happening, and I feel like pulling my hair out in frustration at this point! So after calculating my TDEE, it seems as though consciously eating around 1200 calories at a sedentary rate is the ideal way to go.

I'm looking for any suggestions for meals/snacks etc. that total 1200 to 1500 calories, tasty, filling, and just not.. horribly bland? (The latter problem especially with chicken, it's so so bland most of the time.)

I'm hoping to get into meal prep too as I'll soon be working 13 hour shifts most of the week (very active job, I'll be on my feet all this time - hence why I'm also asking up to 1500 calories as well) and it'll be good to get in the habit of prepping, eating well, adjusting to the lifestyle before then, and although I don't think I eat terribly much now, I'm not losing any weight so some healthy suggestions are well-needed!
