Dear loseit please help me save my dad's life

I am a bit sleep and coffee deprived, while not being a native speaker so please forgive me for spelling or grammar errors but here i go:

I could lose weight. i am in better shape than i was and it's mostly because i moved out and i am poor as shit. I come from a fat family. The kind of fat family where when other kids see your parents they bully you.

This is about my dad. He's in poor shape in several ways:

spinal cyst, fked knees (replaced) , serious overweight, vascular problem that makes his legs swell, honestly a few years from breaking down and on strong pain killers in his mid fifties

i'm worried about him and so is everyone else and after repeated hernia issues that almost killed him it hit him as well that if he keeps going like this he is going to die way before he should. he's in constant pain but i honestly think he is motivated.

Before the plague we went swimming once a week and it's great but the problem i have is he doesn't know how to eat healthy, shit my mum or me don't know how to eat well either.

Here is where i turn to you folks to maybe smash your heads together, reddit is honestly despite it's flaws the best resource i can think of for this so if you can manage a bit of time to help me out i'd be grateful.

He eat's too much, that is a given, but where do i go from here? I need something he can actually properly understand and get behind HIMSELF not just my mom cooking (which has gotten a lot better, a lot less cream etc). I thought about counting calories because that is something he can understand but what i need the most is diet advice. in this country it's normal to essentially eat breakfast twice, essentially breakfast for dinner and from my very limited understanding i would wager eating loads of carbs in the evening is probably not the best thing for you. He likes his thick buttered sandwhiches with liver-spread or nutella so getting him away from that is going to be hard.

So what do i want from you?

i need resources to plan a diet for him that will make him lose weight in a consistent and just a damn plan in general. This is not 2005 so i hope he won't have to eat cabbage soup for a few months, he still needs energy to go to work.

workout is difficult, he does take the dog for a walk which is honestly one of the few things he can do in his state and the swimming is great. biking is out of the question, so is running or similar things.

The weight is killing him. every condition he has is massively worsened by his weight.

i'mma go shopping now but i will be back later. i really hope some of ya'll can help me out.
