Hi!
So I’m thinking about trialling some basic meal prep for the coming week (I’ve noticed myself eating badly whilst it’s assessment season, and would like to turn it around), but I’m a little lost as to where to start.
For a couple of days I’ll be doing chicken, mashed potato, and green beans, but I’m not sure how to prep meals for later in the week. Won’t chicken, or any other meat, go bad after a few days?
I’ve already got some frozen meals which are fine for dinner, but it’s filling lunches that I’m kind of struggling with. I finish work at 11am, so I like to eat something quick and pre-prepared as soon as I get in.
I’m not much of a chef, so I’m just looking for something basic with just a couple of components which I can chuck together and microwave.
Also – snacks. I’m making some plain nachos out of leftover wraps and I’ve got a punnet if grapes, but any other ideas are welcome too!
