Apple watch calories are confusing?

I'm 5'3, 258, and a 21 y.o male. I have been eating around 1600-1800 the past two weeks and have seen the weight come off, but when I was eating around 1900-2200 I was on a plateau for months. I do 30 mins of jump rope a day, and some light resistance work (around 4-5 workouts a week). I just got an apple watch and have been watching it count my calories saying I burn around 3,000 daily. On my rest days, it calculates I burn around 2,600 at minimum. I know the watch can't possibly know the exact calorie count, but I'm confused why I have to eat so low when I'm allegedly burning so much. Any help is welcome, but don't be rude! :-)
