Gaining weight in calorie deficit

Hi all,

So I (29F) have set up a calorie plan on August 26, and ever since that, everything has been going great. I have been noting down my calorie intake with every meal, and I say every meal, including little snacks, vegetables, and drinks. I measure my portions to stay below 1200 kcal every day and cut soft drinks, sweets, and alcohol completely.
And I have managed that, never exceeding 1500 kcal, but staying below 1200 almost every day. Since the end of August, I have lost 6 kg. I was beyond excited.

Three days ago, something changed. I have gained 1,5 kg in total over three consecutive days. I have been on my calorie plan all along and my diet has not changed. For all the past 3 days, I have had an intake of 1100-1200 kcal daily. I was even riding my bike yesterday, burning an additional 200 kcal.

I weigh myself every day first thing in the morning. The scale is going up and I don't know what to do. I note down my weight and make weekly averages. My weekly average for this week exceeded the last week this morning. So I have decided to set my calorie intake limit to 1000, but I know I will be hungry. Or should I try intermittent fasting? I tried keto, but quit because I hate most of the meals and don't want to go into the keto flu, since that might weaken my immune system.

Please help.
