Sous vide is the process of cooking food in a sealed bag in a water bath for a longer time. I use it to cook all my proteins. They're perfectly cooked every time and because it's done in a sealed bag, no oil is required and any added flavours are really intense. I like to do a batch of chicken breast with some herbs and garlic as a lazy meal prep – then I can have it in salads, wraps, or just on it's own throughout the week.
I've got a fairly low calorie allowance so the few calories I save by not having oil really do make a difference, and I honestly think it tastes better cooked like this anyway!
You do need a Sous Vide appliance to start, but you can get one for around $100 (I have an Anova, but I think Joule is another popular brand).
Hopefully this is helpful information to someone! It's a small thing that has made low calorie cooking significantly more enjoyable for me.
