I lost about 20 pounds. I was doing one meal a day. I was basically on a nutritarian diet. I was focusing on high protein, healthy fats and slow carbs. I was losing weight at a very slow rate but I was still losing. When I started my new job I got a lot more cardio. (10k steps a day at the least) I expected that I would lose even more weight but I gained it all back and then some. It makes me feel quite ashamed. I know it’s due to my diet. At work I drink a great deal of lemon water and try to eat from the salad bar daily. But sometimes the salad just doesn’t look appetizing because the lettuce is too soggy. Also due to the extra energy I’m burning my appetite is ravenous. I can no longer eat just one meal a day. My work often has free food and it’s things like cookies, cake, pie, etc. Because I’m a vegetarian there’s not a lot of healthy options at work to choose from and I have been eating a lot of carbs. Basically I’ve been doing what is the most convenient. Sometimes I pack a lunch but most of the time I only have time to make peanut butter sandwiches and I get tired of that quickly. I’ve also been eating fast food late in the evening because I’m still so hungry after work. I used to eat a lot of scrambled eggs because they’re filling and high protein. I know this sounds like a lot of excuses and I should put more effort into meal prep. I need some ideas for easy things to eat that are so I won’t break my diet. I’ve been using myfitnesspal to track my calories and weight as well as my workouts. I’ve been also trying to do some weight lifting when I have enough energy and time left during the day. I want to get an instant pot soon so maybe that will help me to simplify my diet. I really want to have some consistency so I can lose weight again. I feel like I’m wasting all the calories that I’m burning right now.
