Struggling to get calories

In the past week I’ve dealt with some GI issues (acid reflux) due to a ton of problems with my anxiety. It’s resulted in a huge loss of appetite and struggle to eat. I don’t think I have an eating disorder because Ive been trying so so hard to get enough calories. In the past week I’d say I’m eating at most 1000 calories a day but almost assuredly less on most days. Luckily it’s only a short period of time but I’m 19 and 5’8” and I know I need more food and protein. I didn’t track all of what I ate this week but I can say that yesterday I ate: Two bowls of steel cut oatmeal with butter and brown sugar in each, half a GOE protein bar, a few (like 5) potato chips, a few tortilla chips (like 5), a couple pieces of grilled chicken and 3 pieces of a spinach frozen pizza. I’m praying that totaled to 1000 cals. It’s somewhere around there but yesterday was one of my better days. Not sure if this is the right place to post this but I know this sub is well informed on nutrition and caloric intake so if there’s any advice anyone has for me to up my calories without gaining fat rapidly after what turned into sort of a crash diet I would really appreciate it. I think my appetite is slowly coming back.
