I lost a lot of weight but now I feel stuck

I'm a 20y F, and 168cm.
Last summer i weighed about 90Kilo, before I got really sick and became basically bedridden. And everyone felt bad and brought me snacks and other unhealthy foods. Before getting sick I was 60kg at Best.
So past summer I got in contact with an old friend from before I got sick and I noticed quite a bit of disapprovement from her. It took a good while for me to realize why, i had gotten so far from the life i used to live. I used to be active, doing almost daily runs, working at the farm near me, i was outgoing and barely spent a minute at home. But i had become a shut in, no more exercise of any kind. And well I gained a shit ton of weight. I realized i had to force myself back on my feet
By january i was back at at 68kilo, im back to working out tho food is still a hard. I can resist that's not the issue but I crave a lot more than I used to, my daily calorie intake is about 1000-1200 a day, I run every day for an hour and 30min of muscle exercises every other day. But since then, nothing, just nothing. My weight is constant fluctuating a couple of 100grams every so often, but nothing else and it's been so damn frustrating. I'm still ages away from the weight and the body I used to have. Tho medically seen im at a healthy weight I don't feel like I am, to be honest when i see pictures of myself im still fairly repulsed by how fat i look for myself.
I wonder how other people deal with this. The fact that even though you have the proof on the scale that you did lose weight yet you mentally feel like you achieved next to nothing. And if anyone has some words on why my weight has not been moving the last couple of weeks/month
