Have you tried eating Healthy, only to backfire on you??

I lost 20 LB in 2019 during the Summer time but gained it all back btwn Nov'19-Feb'20. By Feb'20, I was 150 LB (I am 5'4) and my knee was hurting (meniscus tear). I was determined to lose weight and I was down to 132 LB by Oct'20 again, I was committed to not repeat the same Winter Hibernation weight gain, mostly successful. Here we are in Feb'21, oscillating btwn at 129-131 LB, trying to get down to 125 LB.

One thing I realized was that I needed to have my dessert that satisfy me every evening, otherwise, I would binge on chips & crackers & cheese so I created my own version of Chocolate Nut Bar, with Semi-sweet chocolate, butter, Peanuts, Roasted Sun flower seeds & pumpkin seeds, Cocoa Nibs, and granola. While I was making a new batch, I read somewhere it's better to eat Raw Seeds as opposed to Roasted as Roasting accelerates aging of nuts/seeds and they turn rancid more quickly so I mixed in Un-Roasted Pumpkin seeds.

It all tasted fine, except I start major thunderbolt campaign...almost immediately...very gassy wassy...had too leave the house for several minutes!

Have anyone experienced this? I am sure many of you tried experimenting with your food trying to eat Healthy only to backfire on you?!
