Help, please. Fat to fit, final laps before maintenance & bulk then maintenance

Hey y'all!

M22, 5’11”, here.

SW/HW: 310lbs

CW: 217.8 lbs

GW: 180lbs

LW: 199lbs

Quarantine had me back up at 255lbs, I got sick of it, and decided to focus more on my diet again, and I'm currently hovering in the same weight range as before when I was at my healthiest, and looking to get beyond the all's and such... (Lowest weight 199lbs because it was recorded when I went to the doctors after a week and a half of only orange juice & to drink, and pneumonia)

Okay, so I've done the journey to shedding most of my excess fat, but how do I go about through the final processes?

I've lost pretty much 70% of the weight, and now I'm down to the last 30%...

Where do I start?

The current plan I've got is minimum one hour of fairly brisk walking daily, I used to do three days (Mon, Wed, Fri) of intense longboard cardio, but it's in repair, unfortunately.

2,100 calories at 1g/lb of protein, 0.4g/lb of fat, the rest of the calories with carb calories

And...that's about it until around March of next year

I've been drinking more water and coffee, getting more sleep, walking more, reading books more, been including more servings of vegetables and fruits, daily vitamin D,

Other than CICO paired with exercise... Where's the next plateau of dietary sculpting?

Counting macros and macro ratios and combine with CICO and exercise and such until it all becomes second nature with maintaining physique, muscle, bodyweight, and such?

Other than a currently out of commission longboard, I've got a TRX pro, a set of three resistance bands, walking, and getting creative with the environment for calisthenics workouts... What can I start doing with what and how?

I'm trying to lose weight to get to 180lbs first, to determine if I need to lose less or more as I approach it... Then I'm going to be going through the process of bulking up my physique to fill out any stretched skin, but I want to be ahead of the curve of what I can actually functionally and sustainably do to actually get more fit.
