Sometimes it's hard to weigh each ingredient and check calories. But not always due to laziness. I think often it's because we fear that the actual dish might have more calories when we expect.
Silver lining:

After you weigh ingredients for a dish, the next time you won't have to do it if you put similar amounts of ingredients.

If you miss out on counting even 100 calories each day due to this, over a year, you will weigh 5 kg (11lb) more than you would have guessed. Over time, small things add up a lot.
Today I committed to weighting my sauced chicken drumstick ingredients and turns out, they have 40 more calories than I expected. If I eat 5 per day (since I prepare food for a day), that's extra 200 calories. :)
