how am I supposed to know how many calories I need in a day?

So I am 5 foot 11 inches roughly 210-215 pounds 19 years old (male),Im active as I lift weight train Mixed martial arts (1 hour each) and threw in 30 minutes on the stationary bike recently and going to do that daily. I have used calculators online to see how many calories I need but it doesnt seem very realistic to be honest,I was eating around 2200-2500 calories but I didnt really lose weight,it could of been because sunday I put some water weight on (diverted from my plan had a few drinks and dessert) yesterday I ate around 1700 calories but it doesnt seem realistic,even when I drop down to 190 Im still very unsure how much I should eat,a buddy of mine is around my height but is around 140 pounds and he eats 2800 calories a day. mixed martial arts burns roughly 500-700 calories per hour,weight lifting burns about 300-400 calories per hour and biking 350-400 calories per 30 minutes so even on the low end im burning about 1100 calories a day aside from my bmr. could I have some sort of metabolic disorder? Im considering seeing a doctor because its worry some.update I woke up this morning down a couple of pounds 213.4 again not sure if its because I ate less last night or just lost some water weight from sunday.
