How does my progress look? I feel like I should be seeing far greater results, but are my expectations too high?

I’m M/20 and weigh as of today 81.9 KG. This time last year I was about 70-odd. I do not have a huge amount of muscle hence although my weight isn’t crazy, it’s mostly fat. This is my progress of the last month;

I know it is the right trend, however I’ve been on a strict diet and workout; 6 times a week with a weight training programme, and I am eating ~1000 +- 200 calories every day. I feel like I should have almost more than I have, up to about a kilogram a week minimum when I do the calorie deficit maths. What are your thoughts?

Also, why do I get these peaks and troughs? My diet is also extremely consistent as I make everything myself and track the macros and eat pretty much the same, or very similar meals. I can’t think of any reason at all I should weigh more today than yesterday, when I worked out, ate a 600 calorie dinner, a 100 calorie snack, and 2 100 calorie protein shakes and that’s it.
